Grilled Chicken Salad With Quinoa


Ingredients:

  • 200g of chicken breast
  • 100g of quinoa
  • 70g of mixed salad greens
  • 50g of cherry tomatoes
  • 30g of cucumber
  • 15g of olive oil
  • 10g of feta cheese
  • 1 tablespoon of lemon juice
  • Salt to taste
  • Pepper to taste

Kitchen Tools Needed:

  • grill
  • mixing bowl
  • knife
  • cutting board

Method of making:

Cook the quinoa according to package instructions and let it cool.

While the quinoa is cooking, season the chicken breast with salt, pepper, and a drizzle of olive oil.

Grill the chicken on medium-high heat for about 6-7 minutes on each side or until fully cooked.

Once cooked, let the chicken rest for a few minutes, then slice it into strips.

In a mixing bowl, combine the mixed salad greens, cherry tomatoes, and cucumber.

Add the cooled quinoa and toss the salad gently.

Slice the grilled chicken and place it on top of the salad.

Drizzle the remaining olive oil and lemon juice over the salad and sprinkle with feta cheese before serving.
