Makluba Chicken Rice


Ingredients:

  • Basmati rice 250 g
  • Chicken 500g
  • 1 cashew nuts
  • 1 tomato
  • 1 tablespoon of ginger and garlic paste
  • A cinnamon stick
  • Cardamom 3
  • Cloves 3
  • Chilli powder 1 tbsp
  • curry powder 1 tbsp
  • A little pepper powder
  • meat curry powder
  • Salt to taste
  • 2 brinjals
  • 2 potatoes
  • A carrot
  • 1 medium ripe tomato

Method of making:

First, wash the basmati rice and let it soak for 1/2 hour.

Now wash the chicken and cut it into large pieces. Now heat a pot and put some oil in it, when the oil is hot, add cardamom, cloves, cinnamon bark, chopped onion, and when it gets fried, add the garlic ginger paste and mix well.

Add the chicken pieces and add salt and pepper powder according to taste, stir well and cook the chicken pieces in the same oil until it gets a little steamed.

Now after the chicken is boiled in oil, add some chili powder, curry powder, meat curry powder and cook it for a while on low flame.

Now add water to cover the chicken and cook the chicken on low flame.

Saute the chopped vegetables until the chicken is cooked. First saute the sliced ​​yams, then saute the sliced ​​brinjal, then saute the carrots and finally saute the sliced ​​peanuts.

Now filter the water in soaked rice.

Keep the cooked chicken  and the chicken stock  separately.

Now rub a little oil on the bottom of the rice cooker. Now spread the chopped tomatoes, fried brinjals, potatoes, carrots and some salt on the bottom. Now spread the chicken pieces on top.

Now put the rice on top and press it a little with your hands. Then add the chicken stock. (Check the measure  here and add it correctly. Or the rice looks like  raw.)

After the rice has cooked and the rice has cooled down a bit, take a big pot  and turn the rice on the other side. 

Now our Makluba Chicken Rice is ready to taste.....
