Pan Roasted Coconut Sour Chicken Recipe



Ingredients:

  • Chicken breast 250g.
  • Salt.
  • Grated Coconut.
  • 20 pepper.
  • Garlic.
  • Cardamom.
  • Gamboge.
  • Coconut oil.
  • Curry leaves.
  • Green chillies.
  • Lime.

Method of making:

For this, I bought 250g of chicken breast. Cut the chicken into big pieces, added salt and 1/4 cup of water and cook in the pressure cooker it for 3 whistles. Those who cannot cook in pressure cooker, boil for quarter an hour.

In the meantime, fry two tablespoons of grated coconut in a pan. Add about 20 pepper, 1 clove of garlic, salt, cardamom, a small piece of  Gamboge, roasted coconut and two tablespoons of water and grind it into a paste.

Put a clay pot on the stove, heat it with a tablespoon of oil, add the ground paste and fry a little. When fried, add curry powder and 3 green chillies. and mix ,then add the boiled chicken pieces. Do not throw away the water in which the chicken was boiled. Add about two tablespoons of that stock and cook for about five minutes, turning both sides.

After that, add lime juice and salt if needed, increase the heat and roast the chicken for about ten minutes until dry. If you try to make this too healthy, reduce the oil and maybe the coconut will burn and become bitter.
