Mutton Pepper Masala Gravy.

Method of making:
Take 500 grams of mutton cut into large pieces and wash it, and then add 1/2 teaspoon of salt, onion, crushed garlic and ginger, 1/2 teaspoon of pepper, 1 cup of water and pressure cook the mixer for an hour or until the meat is soft. (Or boil it on the stove.)
Put oil in a vessel and when it is hot, add a small piece of cinnamon, a star anise, a bay leaf, 2-3 chopped garlic cloves, a piece of julienned ginger, two cardamom pods and fry well until the garlic is soft.
Then add two finely chopped onions, 1/2 tomato, a pinch of curry powder, two dried chili pods, two green chili pods. and when all this is soft, add the meat along with the water.
Mix well and add masala powder, a tablespoon of turmeric powder and a tablespoon of pepper powder, add coriander leaves and salt. Add about a cup of coriander leaves, reduce the heat, cover with a lid and cook until everything is cooked well and the gravy thickens.
Finally, sprinkle some lime juice and coriander leaves on top.
After 3-4 hours of cooking, the color and taste will be perfect.
Adjust the amount of pepper on your choice.
